Healthy Breakfast Recipes!



Three of my favourite recipes for healthy, filling breakfasts for the new year! My homemade pistachio & blurberry granola, avocado on toast with a twist and my favourite fresh green juice.

PISTACHIO & BLUEBERRY GRANOLA
(Makes 15 Portions)

Ingredients:
3 cups of rolled oats
1 cup of (unsalted!) pistachios
1 cup of dried blueberries
1/2 cup of sesame seeds
1/2 cup of coconut oil
3/4 cup of agave nectar
optional – pinch of salt

Instructions: Mix all of the ingredients together, spread out on a large baking tray lined with parchment. Put in the oven on a medium heat for 20 minutes or until golden brown. Don’t forget to mix it up every 5 minutes or so!

AVOCADO ON TOAST
(Makes 2 portions)
1 large (or 2 Baby) avocados
1 beef tomato
6 basil leaves
2 slices of seeded bread, or rye bread
1/2 lemon
Drizzle of avocado oil or olive oil
Salt & pepper to taste

Instructions: Stone & skin the avocados and mash with a fork. Add the juice of half a lemon and salt and pepper to taste. Mix in thoroughly. Drizzle oil on your toast, rub in your basil leaves (4 leaves should be enough for both peices of toast) Top with one slice of tomato, mashed avocado, extra pepper and a basil leaf.

MY FAVOURITE GREEN JUICE
(Makes 1 large glass)
1 apple
1 courgette
1/2 cucumber
6 basil leaves
1 lime (remove peel)
