how many calories this potatoes have
the problem here is that the herbs were added to soon, that's why you end up with pale undercooked potatoes that aren't really crispy. A good roast potato should be crispy on the outside and soft and fluffy on the inside, part boil them, have them fully peeled and then half way through the roasting, then you can put in the herbs,cook at 425F, quite a high temperature, until golden brown.
do we blanch the potatoes or just cut them and toss in oil?

If you wanna eat healthy you shouldn't eat potatoes, or eat them maybe once a week. They're not healthy.
Olive oil is very healthy. So is garlic. I would put fresh lemon juice on those too.
