Have you tried Soy Amino instead of Soy Sauce? It has about half the sodium of even low sodium soy but it has an amazing flavor that is very similar.

Fabulous recipe! But… Why wouldn't you store it in the glass boxes? When I want to heat something, I simply transfer the foods I want to heat into a pan and heat on the stove (or transfer cold items onto a plate and heat in a microwave). Also, I like to put the toppings into little bags or small containers so that they stay fresher. Also, I believe it is good to have some assembly of the meal to get the digestive juices ready for the meal.
