I try to do meatless Mondays for myself. I make a really good recipe for spicy Thai noodles that's vegetarian but someone could add any kind of protein they want. I also make a really good coconut chickpea curry.
Im glad you support her choice to go meat free. My oldest has been meat free for 2 years. Excited to see your meal ideas in the coming weeks. My daughters favorite dinner is kale and sweet potatoes 😊

I use broccoli in lasagna, too. Interesting how many variations there are!

The other dish I would have to leave the beans out, and probably use rice instead of quinoa. I would also add in a few more veggies like carrot and broccoli. I add carrots to everything lol 😁 (they're delicious in an omelette btw…. just saute some finely diced carrot, onion, and peppers in a skillet with olive oil, then add your scrambled egg in and cook…. tastes amazing!)
Now is Paige just doing vegetarian or is she going to do vegan? If she was vegan I would assume you would not have used egg and cheese in the lasagna lol 😁.

When I was a vegetarian and made lasagna, I made the sauce I'd always made in the past minus the meat. Then I chopped and sauteed mushrooms, peppers, onions, and other veggies in butter and threw them into the sauce. They have TVP crumbles relatively readily available in a lot of store and you could try adding that to your sauce also. It will give that meatiness texture. You might find it more satisfying with more stuff in it.
