Awesome tips! One Thanksgiving, I bought my entire family together in one oversized Beach Rental and we were to have the most memorable Thanksgiving ever. I had assumed with all the cooks in one location, all the best tips and tricks would bubble forth naturally. For the most part, that is what happened except for my sister's contribution. She prepared her reduced calorie instant mashed potatoes. To this day, my darling son complains bitterly about that forgetting all the really good stuff that we had that day . The next time we did it, in a less chic location, we insisted that everyone changed dishes from two years before and all went smoothly .

I've used the blender trick for gravy and Hollandaise. Works like a charm and makes the Hollandaise fluffy. As for the potatoes–my dad taught me to drain the potatoes well, put them back on the stove on low and let all the steam evaporate. Then, (we never owned a potato ricer) use the mixer to mash the potatoes thoroughly before adding any liquid. Much to my kids' disappointment, my potatoes have never been lumpy. They always preferred their grandmother's potatoes because they had lumps.
