Would love to see a keto version of this, my favorite dish. Cornstarch can be subbed with glucomannan or psyllium husk powder, the soy sauce with liquid aminos, and I'd use avocado oil. I'd also use thigh meat. The tricky part for me would a substitute for the oyster sauce, found in so many Chinese recipes.
Should add water chestnuts and bamboo shoots .

I'm sure this is very tasty. But I currently live in China right now. Guangzhou, China. I've been here for eight years. Unless you are in China you really don't know what real Kung Pao chicken is like. The type he is cooking is very Americanized. He's using just read dried chili peppers. That is fine that is in the Chinese version here in China. But what it's missing is the Sichuan flower pepper ่ฑๆค. This is actually not a pepper play peppercorn. It's very spicy but has a numbing effect on your mouth and tongue. It's quite unique. And take something to get used to. But it's what is in real Kung Pao chicken. For sometime it was illegal to have ่ฑๆค Flower pepper in United States. But I believe that is changed. I'm sure at some local Asian markets you can find it.

I read a lot of comments and you people are asking whats in it. sounds to me like Sherry cooking wine, hoisin sauce, soy sauce, and chicken stock. I like to add in a teaspoon of oyster sauce also but that's me.

No offence. But this is not what Kong Bao chicken we cook in China. The way we cook in China is much more delicate.
