    i have one query….i use Morphy Richard's 60 litre OTG oven for baking the cakes, after icing the cake i cut the cake into slices the cake starts to crumble and its very difficult to get a proper slice …

    DARK CHOCOLATE CUPCAKES (EGGLESS WITH VEGANEGG)- I did not use coffee powder as I don't like it, I kept the cocoa amt the same as I'm a chocoholic 😀

    Ingredients

    1 cup refined four (mida)
    1 teaspoon baking powder (I used baking soda instead of baking powder by mistake, but it turned out good as well: what I did was I added the same amt of baking soda specified, but I added a pinch of baking powder)
    ¼ cup cocoa powder
    1 cup butter, softened
    1 cup caster sugar (SINCE MINE IS A VEG CAKE AND THE VEGAN EGG SMELLS A BIT LIKE SENDHA NAMAK/BLACK SALT, MY ADVICE IS TO DOUBLE THE QTY OF SUGAR OR MAKE IT AT LEAST 1.5 TIMES THE NORMAL AMOUNT)
    1 teaspoon vanilla essence
    3 eggs (REPLACEMENT BY VEGANEGG: 6 LEVEL TBSP VEGANEGG POWDER & 1 1/2 CUPS ICE COLD WATER)
    ¼ cup milk

    Method

    1. Preheat oven to 180º C.
    2. Sift refined flour, baking powder and cocoa powder together into a bowl and set side. DO THIS TWICE SINCE IT IS A VEG CAKE; we need more air in it to help it rise.
    3. Mix VeganEgg with water, whisk until you get a creamy mixture.
    4. Put butter and sugar in a large bowl beat with an electric beater for one minute. Add vanilla essence. Add VeganEgg mix gradually.
    5. Add flour mixture to the butter and sugar mixture and fold in well.Check the consistency of batter and add a little milk to get the required consistency.
    6. Line the cupcake tin with cupcake cases. Fill each cupcake case half way or three quarters, and bake in the preheated oven for thirty to thirty five minutes. KEEP AN EYE ON IT AS EACH OVEN IS DIFFERENT!
    7. Remove from the oven and transfer on a wire rack to cool.
    8. Use as required.

    Today, I happened to try this recipe only with a few adjustments… I am a lacto vegetarian and I just bought a plant based product that works like egg. It is a powder known as VeganEgg and is from the USA. Today, I made this cake with that… I just want to thank you so much for the inspiration and the idea. But just one request- could you pls post MORE recipes for EGGLESS cakes?

  • When I bake chocolate cake it cracks on the top… But the plain cake doesn't..what could be the reason?i use all the ingredients just like u did.. I even add cream n sometimes milkmaid..
