I think I'm going to do the cauliflower bites but I may add salt and pepper to the panko breadcrumbs to skip on the sauce and do a salt/pepper version of your recipe ! :)

If you want a vegan alternative to the egg in the first recipi, you can simply use a mix of 1 cup each of flour and water instead of egg :)
panko is awesome too because it has waayyy less ingredients/weird chemical preservatives than most breadcrumbs!! :)
