This is a nice technique, but not really a recipe. Your videos are very interesting, and have nice quality video, but there are many questions I have about what you do and why. I can see you are using salt to clean the outside of the fish and season it, and you use Thai chilies, watermelon juice, lime/calamansi juice , garlic, shallots, lemongrass, more salt and maybe sugar? for seasoning. You also stuffed some other herbs into the mouth of the fish with the lemongrass, but what were they? Basil? Also, as other comments said, why did you not clean the fish? Just because you wanted to show the technique and not the whole process? Or do you not need to clean it? I understand you probably have trouble with translation, but there are many questions that arise from the interesting things you show us. Thanks for the videos!
