"I believe", "my opinion". – I'm just gonna throw some facts out here that aren't opinion or belief: The reason cast iron has good heat retention is because it's brittle; so they're made thick (not because of material). Aluminum holds as much heat at nearly half the weight of iron. Aluminum distributes heat much better than iron (cast iron is horrible for hot spots). All-Clad no longer has exclusive rights to make multi-clad pans (so you can find cheaper decent clad pans like Tramontina, Cooks Standard) . Stainless steel can also be seasoned for the same exact food release property (if even needed), or flavor build up. Switching to a tri-ply clad pan will save on heat energy, will be more ergonomic, better for sauteing (flipping), and yield much more even browning on foods that aren't being stir fried (pan cakes, french toast, hash browns, etc).
Ad ham or sausage or bacon or even ALL of them.
if you cover what you are frying with a lid…it cooks quicker..
