I love 1 pot wonders. Or in this case, 1 sheet pan wonders. I've made egg in the hole before on a skillet, but I prefer to use mayo to pan toast the bread instead of butter, because too much can make the bread soggy and not enough can cause uneven blotchy browning or worse, burn parts of the bread before the egg is cooked. I find that I don't have that problem as much with a thin layer of mayo. I'm not sure if the mayo trick will work in the oven, but I'm guessing I'd have to experiment with the broiler to get the bread toasted and egg to cook at the same time.

A thin, crisp chocolate chip cookie, a thin, crisp oatmeal cookie or a crisp vanilla cookie, a vanilla wafer textured cookie recipe, would be much appreciated. Thank you.
